Rock Bottom Restaurant & Brewery History
The very first Rock Bottom Brewery was opened in downtown Denver in 1991 by Frank Day. It was a place meant for friends to share a cold beer while enjoying some good sides.
But probably the most interesting plot of this story is the name itself. Before the grand opening, the founder and his partners were literally standing in the empty hall of their new location at 16th Street Mall, Downtown Denver.
It was the underground floor, and the top was Denver’s Prudential Insurance building. It was an iconic place that advertised itself as “The Rock.”.
Even its logo had a rock in it, and this is where the mind caught up with the idea. The bottom of the Prudential building, so it’s kind of at the bottom of the rock!
Or, we can say, rock bottom! Yup, that’s the exact reason why this specific name was chosen. There were no hard feelings; just coincidence played a big role later on.
During the 1990s, the founder, along with his new brew masters, developed the infamous “Portland Recipes.”
It had five items on the list: pelican, coyote, brown, red, and stout. These standard recipes were then evolved into the current ones like IPA, wheat, amber, porter, lager, and so on.
Numbers started growing from one to ten and eventually to 17, which is the latest one. Not everyone can become an owner of this chain since each site has its own brewer.

Let’s see if the quality is on par or not. We started with a starter dish called garlic fries. Basically, good old fries with garlic flavors.
Fried with extra virgin olive oil, fresh garlic, and parsley, which gave it a bit of a low greenish kind of look. It doesn’t look alarming at all, though.
You can even see parsley cuts stuck in those fries—a gentle touch that makes this simple dish more attractive.
And yeah, it is as pleasing as it looks. A bit on the spicy side, but that’s fine. It’s just a warm-up for the main dish that’s coming right up!
Nashville Hot Chicken was the final contender on the list. It’s unique, and if you don’t know, these chickens aren’t sliced; these are normal cuts.
Weird right? Who knows, maybe this weird one will turn out to be the best yet. It’s made with Nashville hot chicken, white sauce, mozzarella, sweet Thai chili, and scallions.
And believe me, these chicks are literally too hot! It was hotter than we anticipated. But this pain was bliss that we gladly endured.
Each pizza slice came with one chicken tender, a hot one, yeah, and a thin crust filled with greens that did a good job of reducing the overall heat.
What can be better than a good cold beer? Cold beer and spicy meals are the dream combo that works with anyone. And in the end, these $5 growers were the missing piece we were looking for!
