Rosa’s Cafe History

The first Rosa’s Cafe opened its doors in San Angelo, Texas. At the time, it had a not-so-big venue, which was acceptable in the 1980s.

It had potential from day one. But still, it stayed a rather underwhelming brand until 1995. Yup, after 12 years, a monumental thing happened. Bobby D. Cox purchased everything Rosa’s had to offer, along with its five locations.

With a good number of funds behind their backs, Rosa’s menu shined like a shooting star. Their signature dishes, like beef and chicken fajitas, later decided their fate as the best in the region.

Texas was a busy town even in the 1990s, and that’s why many people tasted its fascinating dishes. Many new contributors also stepped forward and opened their branches in other areas.

Later, these independently owned restaurants would reach a milestone of 50. Despite the numbers, Rosa’s menu has not had any downfall since the new owner took hold.

Since the main genre was Tex-Mex, many Texas- and Mexican-style dishes were added. For example, tacos are one of the most popular gas station delicacies in this day and age.

Thanks to these additions, Rosa’s Cafe added drive-thru stalls along with dive-in and sit-down. This turned it into a full-service experience, which was a plus.

It doesn’t matter whether someone is in a hurry or has a few family members with them; Rosa’s menu will always have perfect and fast service for any kind of situation.

Rosa’s menu has always been family for Fajitas. So it would be a shame if we did not start with those fascinating dishes.

There were three available options for Fajitas. The first one was an ordinary one, while the other two had guacamole and queso as the fillings.

We went with the third option, as it looked quite creamy. And did we forget to mention that it had beef and chicken options too?

Yup, it’s their signature dish after all. Chicken is the preferred option, but beef looked quite juicy too. Next, we needed something balanced. So we went for bean and cheese burritos.

The outer layer was smooth and fluffy, but the filling just enhanced it. It became thick, and the fluffy texture was combined with the crunchiness of beans and the creaminess of cheese.

Doesn’t that just sound lovely? We also noticed a taco with salad as a filling. It reminded us of Chico’s Tacos. They did not have a dedicated dish, but we were free to fill our tacos with salad.

Thankfully, Rosa’s Cafe Menu already had it planned, so it saved us in a big way. The name of this dish was Taco Salad. A straightforward name.

Meanwhile, there were meat options too, like Fajita Salad. It had both beef and chicken options, as always. But you could also go for both in a combo pack.

As for side dishes, most of them had the same ingredients as the ones above. Except for queso, all others came with chips and dipping sauce.

Chips with salsa, queso, and guacamole, to be exact. Anyway, it went right in with the Fajitas that we had, so who are we to complain?

It was nothing like those gas station ones. Tostadas looked quite delicious, but our stomachs couldn’t handle a single bite, so we just moved on. But that doesn’t mean anyone should avoid that.
