The Old Spaghetti Factory was founded by Guss Dussin on January 10th, 1969. He chose a quiet place in Portland, Oregon.

This location stayed open until 1984 when they moved onto the South Waterfront. The classic trolley car also came along with it as a package.

This trolley was a refurbished bus from Portland. Guss found it near the fields of Reed College, and then he had a bright idea.

He repaired it and then turned it into one of the iconic symbols of The Old Spaghetti Factory. Later, this symbol became a permanent marker for its brand.

Anyhow, this trolley car had a seating capacity of 300 people, according to a Desert News article from 1989.

Since spaghetti and pasta didn’t require big plates or anything, that’s why this small trolley car was just enough.

Despite how popular it became, soon it became a hassle for refurbishing cars, and with time, its small space started becoming a liability.

So it’s now a focal point rather than a dining space. It turned into a full-blown franchise around the same time it left Portland.

Now it’s a corporate-owned business that has dozens of locations in Canada, the USA, and Japan. In Canada alone, it has 15 locations active throughout the year, while in America, it has expanded to 42.

Pasta from the Old Spaghetti Factory menu slowly turned the market towards Italian foods. TexMex was the biggest competitor for Italian recipes with its fast foods like tacos.

The Old Spaghetti Factory menu is divided into four parts. The first one is called Entrées, and it includes a few salad dishes.

These dishes are included with the main dish you pick, so there is no need to pay twice. We went with item no. 21, called Grilled Chicken Caesar Salad.

It had crisp romaine tossed in their house-made Caesar dressing with croutons, bacon crumble, and shredded parmesan.

Then the main ingredient is added in the form of a grilled chicken breast. It’s a non-vegetarian item, so if you want something veggie, go for Esplanade Salad.

Its main ingredients go like this: mixed greens tossed in a cranberry vinaigrette with grilled red peppers, cucumbers, sun-dried tomatoes, candied pecans, strawberries, and goat cheese.

It comes in three options: vegetarian, gluten-free, and adding a grilled chicken breast. If you are thinking of picking 2nd or 3rd, it’ll cost extra.

As for the main dish, we had a lot of options. From plates of pasta to classic spaghetti, everything looked fantastic.

But how can we say no to the signature dish? So we went with Impossible™ spaghetti and meatballs.

This dish was hand-rolled with 100% plant-based vegan meatballs. This was also made in-house with Impossible™ meat and served with Italian marinara sauce.

Spaghetti with browned butter and Mizithra cheese also looked like a popular choice. This cheese is a family dish that comes directly from Guss.

Anyway, it had their signature, Mizithra. It is a deliciously salty cheese that is grated over their spaghetti and drizzled with browned butter.

This spaghetti was the main dish and also the second part of their menu. Meanwhile, the other two are beverages and appetizers.

Like different kinds of sauce—no meat, with meat, vegetarian, etc. Gluten-free options were added along with kids’ meals.

There were also group options. This included combo meals like the Group Menu Tutti Package. It included all meals, including their classic fresh bread with whipped garlic butter.

Crisp Green Salad with House Dressing, Spumoni Ice Cream, and Coffee, Tea, or Soft Drink. It was priced somewhere around $20 after tax.
