The first retail bakery opened up in 1955 at 167 West 74th Street, Upper West Side, Manhattan, New York City.

The founders Pam Weekes and Connie McDonald initially served freshly baked artisanal bread and thus stood with the name Levain, which is French for natural leavening agent made of flour, water, and white yeast and is best referred to as a sourdough starter.
